Our client is seeking a for Senior Chef / Kitchen Manager to join their team in the Dallas, TX region. This is a newly created role responsible for assisting the Director of Culinary Operations with oversight of all kitchen and culinary operations for the region including managing and mentoring 10 young chefs. Requirements:

  • A.S or B.S in Culinary Arts, Food Services/Management, or related field; OR Culinary Certificate with 2+ years in a related position
  • 3+ years of progressive culinary and/or kitchen management experience
  • Ability to travel locally up to 70%

Responsibilities:

  • Supports and trains kitchen staff with culinary operations including but not limited to:
    • Safe food handling, sanitation, production, and operation of all kitchen equipment in accordance with company standards.   
    • Compliance with USDA guidelines.
    • Following recipes, production records, and completion of waste logs. 
    • Conduct quality assurance audits. 
    • Create and maintain regular cleaning and maintenance schedules for all kitchen equipment, work areas and storage units while ensuring that kitchen staff adheres to maintenance schedules.
  • Supervise, coordinate, and execute various culinary activities (i.e. demonstrations, taste testing’s, focus groups, etc.) and education initiatives.
  • Assist with district caterings and special events. 
  • Partner with Nutrition team to provide feedback on menu’s and promotions.
  •  Assists with ordering and inventory control of both food and non-food supplies – ensuring that product is available when needed.
  • Ensures kitchen locations comply with all federal, state, and local health and sanitation regulations and procedures. 
  • Other duties as assigned.
